Sebuah uji klinis acak dari Departemen Biologi Oral FKG UGM menemukan bahwa mengunyah tapioka pearl dalam bubble tea selama tiga hari berturut-turut secara signifikan menurunkan kadar C-reactive protein (CRP) dan meningkatkan kadar kalsium dalam air liur.<\/strong><\/p>\n\n\n\n<p>CRP adalah penanda inflamasi. Kadarnya yang tinggi dalam saliva mengindikasikan adanya respons peradangan di rongga mulut, sementara kalsium berperan penting dalam proses remineralisasi gigi. Ketika keduanya bergerak ke arah yang lebih baik, kualitas saliva sebagai benteng pertahanan tubuh ikut meningkat.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\"><strong>Boba sebagai Stimulasi Mekanis<\/strong><\/h2>\n\n\n\n<p>Penelitian yang dipublikasikan di <em>F1000Research<\/em> ini melibatkan 15 subjek berusia 18\u201325 tahun, seluruhnya mahasiswa FKG UGM. Selama seminggu, mereka mengonsumsi 100 ml bubble tea merek Chatime selama lima menit per hari. Minggu berikutnya, subjek yang sama beralih ke teh tanpa tapioka pearl sebagai kontrol.<\/p>\n\n\n\n<p>Sampel saliva dikumpulkan pada hari pertama sebelum konsumsi dan hari ketiga setelah konsumsi. Hasilnya cukup mencolok: pada kelompok intervensi, kadar CRP turun dari rata-rata 247,06 pg\/ml menjadi 90,97 pg\/ml \u2014 penurunan yang signifikan secara statistik. Sementara pada kelompok kontrol, penurunan CRP tidak mencapai ambang signifikansi.<\/p>\n\n\n\n<p>Kadar kalsium meningkat di kedua kelompok, namun peningkatan lebih tajam terlihat pada kelompok yang mengunyah tapioka pearl.<\/p>\n\n\n\n<p>Mekanisme yang diusulkan tim peneliti berpusat pada stimulasi mekanis. Mengunyah tapioka pearl memicu kelenjar saliva memproduksi lebih banyak air liur. Saliva yang meningkat volumenya membawa serta lebih banyak protein antimikroba seperti mucin, \u03b1-amylase, lysozyme, dan peroxidase. Berkurangnya mikroba di rongga mulut, pada gilirannya, menekan respons inflamasi lokal yang tercermin dari turunnya CRP.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\"><strong>Teh Pun Punya Peran<\/strong><\/h2>\n\n\n\n<p>Bukan hanya tapioka pearl yang bekerja. Tim peneliti yang dipimpin Prof. Dr. drg. Juni Handajani, M.Kes., Ph.D., PBO. juga menyoroti kontribusi komponen teh itu sendiri. Epigallocatechin gallate, senyawa polifenol utama dalam teh, diketahui memiliki aktivitas antibakteri dan antiviral. Temuan ini sejalan dengan penelitian sebelumnya yang menunjukkan bahwa konsumsi teh hijau dapat meningkatkan kapasitas antibakteri saliva.<\/p>\n\n\n\n<p><em>&#8220;Bubble tea drinks could improve the quality of saliva by decreasing salivary CRP and increasing Ca levels.&#8221;<\/em><\/p>\n\n\n\n<p>\u2014 Prof. Dr. drg. Juni Handajani, M.Kes., Ph.D., PBO. , Departemen Biologi Oral FKG UGM<\/p>\n\n\n\n<p>Tentu, temuan ini perlu dibaca dengan hati-hati. Ukuran sampel yang kecil dan durasi intervensi yang singkat membatasi generalisasi kesimpulan. Satu reviewer internasional dari Universitas S\u00e3o Paulo bahkan menilai bahwa kesimpulan penelitian belum sepenuhnya didukung oleh data yang ada.<\/p>\n\n\n\n<p>Namun sebagai pijakan awal, riset ini membuka pertanyaan yang menarik: jika mengunyah tapioka pearl tiga hari saja sudah menggerakkan biomarker inflamasi, apa yang bisa terjadi dengan durasi lebih panjang dan sampel lebih besar?
